ALL ABOUT US

How It All Began

Founded by Tucker Puljic and Katrina Newfrock in 2022, Slow to Rise Bakery is a baking business based on Nantucket Island, Massachusetts. We previously owned and operated 5 Mile River Baking in Darien, CT before moving to Nantucket full-time and deciding to start a business out here. While we offered many different items during our run as 5 Mile River Baking, bagels and cookies were two of our standout offerings, and upon moving to Nantucket we quickly realized that the island was desperate for a good bagel and a unique cookie.

 

Prior to opening, we've been honing our craft, trying to make the best bagels we can, as well as trying out many new cookie flavors and other baked goods. One of our biggest limitations when we were operating as 5 Mile River Baking was that we were licensed as a Cottage Food bakery, meaning that we were only able to sell 'nonhazardous at room temperature', nonperishable foods. Now that we are scaling up to a bigger operation, in a fully licensed commercial kitchen, we are hoping to offer much more than baked goods. 

For the 2023 Season, we will be operating Saturdays & Sundays to start - Saturdays we will be at the Sustainable Nantucket Farmer's & Artisans Market. Sundays we will have pick-ups for preordered items. Please see our ordering page for more information!

The People to Blame for Your Increased Carb Intake

KATRINA NEWFROCK

Katrina is one half of the Slow to Rise Bakery team. She has a varied background in food service and hospitality, with special emphasis on beverages. She is always looking for a way to merge these interests, and is always questioning things and trying to improve recipes.

  • College: Johnson & Wales University '20, B.S. Food & Beverage Entrepreneurship, Minor Craft Brewing; '19 A.S. Culinary Arts

  • Favorite Recipe: any cookie, but especially cornflake caramel, which came to her in a dream

  • Experience on Nantucket: Katrina spent her first summer on Nantucket in 2019, after meeting Tucker. She has lived full time on Nantucket since April 2021. She previously worked at Born & Bread Bakery, and Afterhouse Seafood & Wine Bar, before following her own entrepreneurial interests.

TUCKER PULJIC

Tucker is the second half of Slow to Rise. His experience mainly comes through restaurants and fine dining, but he has always loved experimenting with new foods at home no matter where he's working. From pho to birria tacos to NY Style bagels, Tucker has played a major role in the development of many of our recipes, and is the creator of our much-loved bagel.

  • Favorite Recipe: Pizza bagels, because how could you not love a pizza combined with a bagel

  • Experience on Nantucket: He has lived every summer on the island since early childhood, and is now living here year round, as of April 2021. Before starting his own venture, Tucker worked at many well-regarded Nantucket establishments including The Pearl & Boarding House, Dune, and Bartlett's Farm.
